Mini Cream Puff Pull-Apart Cake

Ingredients

For the buttercream (Store-bought buttercream can be used)

  • 1 (114-gram) stick unsalted butter, at room temperature
  • 2 cups / 226 grams powdered sugar
  • 2 tablespoons / 30 grams heavy cream or milk
  • 2 teaspoons vanilla bean paste or half a vanilla bean
  • ½ teaspoon salt

For the topping

  • ½ cup blackberries
  • ½ cup raspberries
  • ½ cup strawberries
  • Fresh mint
  • Powdered sugar, for sprinkling

Equipment

  • Stand mixer with paddle attachment or hand mixer
  • Sifter or fine mesh sieve
  • Offset spatula
  • Piping tips and a piping bag (optional)
Directions

Buttercream

  1. Place the room-temperature butter in the bowl of a stand mixer. Using the paddle attachment, mix the butter for 3 to 4 minutes or until the butter is light in color.

  2. Sift the powdered sugar in a sifter or fine mesh sieve to break up any clumps.

  3. Add the powdered sugar to the butter in ½-cup increments. Mix at a medium-low speed. Continue to add the powdered sugar until the butter and sugar are completely incorporated.

  4. Add the salt and vanilla to the buttercream and mix for about 2 minutes.

  5. Add the heavy cream (or milk for a less creamy alternative) to the buttercream mixture. Mix the buttercream for 3 to 4 minutes at medium speed or until the buttercream is light and close to white. Add 1 to 2 teaspoons of heavy cream if the buttercream is too stiff.

Assembly

  1. Wash and dry all the berries.

  2. Add a small dollop of buttercream to the bottom of a Delizza Belgian Mini Cream Puff. This will help keep the cream puff in place. Place the cream puff on your plate and create a design of your choice.

  3. Using an offset spatula, spread a layer of buttercream over the cream puffs.

  4. Use the remaining buttercream and pipe various designs and mounds of buttercream on top of the buttercream layer.

  5. Place the berries onto the buttercream. To control your design, add about half the amount of one type of berry at a time. Add additional berries as you go.

  6. Garnish with additional powdered sugar and fresh mint, and serve immediately.
