Macaron Ice Cream Sandwiches
For a crowd-pleasing dessert, look no further than Delizza's Macaron Ice Cream Sandwiches. These bite-sized treats are sure to entertain, packing big taste into a sweet and simple recipe.
Ingredients
(Makes 12 ice cream sandwiches)
- 23 Delizza Macarons (room temperature)
- 16 ounces ice cream (flavor of your choice)
- Sprinkles or chopped nuts (optional)
- 1 cup melting chocolate (optional)
- 2 tablespoons heavy whipping cream (optional)
Directions
Line a ¼ sheet tray with plastic wrap.
Empty ice cream pint onto the lined sheet tray.
Spread and smooth out the ice cream. For best results use an offset spatula.
Cover with plastic wrap and allow ice cream to set in the freezer overnight.
Carefully separate the shells of the Delizza Macarons. Keep the macaron filling on the cookie.
Remove the ice cream from the freezer.
Separate the ice cream layer from the sheet tray. Peel back the top plastic layer and cut into 1-inch square pieces. For best presentation, use a circle cookie cutter for a perfect fit.
Sandwich the ice cream with the two macaron shells. Repeat for other macaron shells. Let set in the freezer for a minimum of 2 hours.
For an optional chocolate dip, in a small saucepan heat whipping cream until lightly simmering. Add chocolate and mix together until melted. Add more heavy whipping cream for a thinner coat.

Carefully dip the Macaron ice cream sandwich into chocolate dip. If desired, add additional toppings like sprinkles or chopped nuts before the chocolate cools.

Set aside in the freezer for 10 minutes to harden. Serve and enjoy immediately.
