Macaron Ice Cream Sandwiches
For a crowd-pleasing dessert, look no further than Delizza's Macaron Ice Cream Sandwiches. These bite-sized treats are sure to entertain, packing big taste into a sweet and simple recipe.
(Makes 9 to 12 ice cream sandwiches)
- 24 Delizza Macarons (room temperature)
- 16 ounces ice cream (flavor of your choice)
- Additional ice cream toppings, e.g., sprinkles or chopped nuts
- 1 cup chocolate or white chocolate (optional)
- 2 tablespoons heavy whipping cream (optional)
Line a ¼ sheet tray with plastic wrap.
Empty ice cream pint onto the lined sheet tray.
Spread and smooth out the ice cream. For best results use an offset spatula.
Cover with plastic wrap and set in the freezer overnight.
Carefully separate the Delizza Macaron shells apart. Keep the Macaron filling on the cookie.
Remove the ice cream from the freezer.
Separate the ice cream layer from the sheet tray. Peel back the top plastic layer.
Cut the ice cream into 1-inch square pieces. For the best presentation, use a circle cookie cutter for a perfect fit.
Sandwich the ice cream with the two Macaron shells. Let set in the freezer for a minimum of 2 hours. Repeat for other Macaron shells.
For an optional chocolate dip, in a small saucepan heat whipping cream until lightly simmering. Add chocolate and mix together until melted. Add more heavy whipping cream for a thinner coat.
Carefully dip the Macaron ice cream sandwich into chocolate dip. Optionally add additional toppings to the melted chocolate.
Set aside in the freezer for 10 minutes, then serve immediately.
